I hope those of you who celebrate the 4th of July had a great one! I know in my neighborhood it was extremely loud! A lot of happy celebrating going on! 🙂 I made a gluten, dairy and nightshade free spice cake with a soy cream cheese frosting and fresh festive berries. I used my sunshine cookie cutter to make what I thought would look similar to fireworks on the cake.
I liked how it turned out for the most part, but next time I will add acacia fiber. Acacia fiber helps gluten free baked goods hold the moisture, so they are less dry and crumbly. Everyone liked it, but I am super picky about my continued learning of cake baking and decorating.
I forgot to mention that I always use a sugar blend of stevia and sugar. There is always more stevia than real sugar. I am not the biggest fan of a desert that has only the sweet taste of stevia, so I found that if I use a blend my pallet can accept it much better. 🙂
